Sheet-pan Gnocchi With Spicy Sausage And Peppers
  1. Preheat the oven to 450 ̊. Line 2 rimmed baking sheets with foil. Cut the sausage into 1-inch pieces.

  2. Divide the sausage pieces, gnocchi, bell peppers, red onions and garlic between the 2 baking sheets. Sprinkle with the oregano and salt. Drizzle 3 tablespoons olive oil over each baking sheet and toss to coat the ingredients in the oil.

  3. Bake, switching the baking sheets halfway through, until the vegetables are tender and caramelized, the sausage is cooked through and the gnocchi is crisp and golden, 35 to 40 minutes.

  4. Sprinkle the pecorino and parsley over both baking sheets. Top each serving with a drizzle of balsamic glaze.
