Strawberry Poppyseed Vinaigrette
  1. Toast the poppy seeds well.

  2. Let the shallot sit in the lemon juice for a little bit to take away some of the raw shallot flavor.

  3. Add the mustard, strawberry preserve or jam, and red wine vinegar.

  4. Slowly whisk in a mixture of olive oil and another neutral oil that won't solidify in the refrigerator.

  5. Add the freshly chopped thyme and the toasted poppy seeds.
