Blitz the Parmesan and picked herb leaves in a food processor until fine
Add the flours, butter and lemon zest to the food processor
Slowly mix until the mixture goes through a breadcrumb stage then clumps together
Divide the dough in two to make it easier to work with
Roll out to approximately 5mm thickness
Cut into desired shapes (sticks or rounds)
Arrange on a lined baking tray
Bake at 160°C in a fan oven for 10-12 minutes for sticks, or slightly longer for biscuit rounds
Serve alongside a drink or in a cheeseboard
