In a blender or mixing bowl, combine the oatmeal, eggs, yogurt, and baking powder. Blend or mix until you have a batter-like consistency.
Fold in the grated apples to keep some texture in the pancakes.
Heat a non-stick pan over medium heat. Pour about ¼ cup of batter for each pancake.
Cook for 2-3 minutes on each side, or until golden brown and cooked through.
Serve warm! Optionally, add a sprinkle of cinnamon or drizzle of honey for extra flavor.
