  1. Preheat your oven to 350

  2. Add your quinoa, bone broth, and a large pinch of salt to a small sauce pot and bring to a boil

  3. Reduce to a simmer, cover, and cook for 13-15 minutes until the moisture has absorbed then let rest for a few minutes and fluff with a fork

  4. Toss your spicy cashew ingredients together and spread out on a parchment-lined baking sheet

  5. Roast for 20 minutes, flipping halfway through

  6. While your quinoa and cashews are cooking, whisk together your dressing ingredients and chop up your veggies

  7. Toss all of your prepared elements in a large salad bowl with your dressing (if meal prepping, omit the cashews and add when ready to eat)

  8. Serve and ENJOY!
