Spicy Peanut Coconut Noodles
  1. Heat neutral oil in a pan

  2. Add minced ginger, garlic, and green onions, sauté for about 1 minute

  3. Add coriander powder and cook

  4. Add ½ cup water, soy sauce, and stock cubes, let simmer

  5. Once water is hot, add peanut butter and chili oil, adjust seasonings

  6. Add coconut milk and let simmer on low flame

  7. Remove from flame and stir in lime juice and sesame oil

  8. Cook ramen noodles in boiling water for 4-5 minutes until fully cooked

  9. Strain noodles and rinse under cold water

  10. Place noodles in a bowl and pour prepared broth over them

  11. Garnish with chopped peanuts, green onions, sesame seeds, and chili oil
