Heat neutral oil in a pan
Add minced ginger, garlic, and green onions, sauté for about 1 minute
Add coriander powder and cook
Add ½ cup water, soy sauce, and stock cubes, let simmer
Once water is hot, add peanut butter and chili oil, adjust seasonings
Add coconut milk and let simmer on low flame
Remove from flame and stir in lime juice and sesame oil
Cook ramen noodles in boiling water for 4-5 minutes until fully cooked
Strain noodles and rinse under cold water
Place noodles in a bowl and pour prepared broth over them
Garnish with chopped peanuts, green onions, sesame seeds, and chili oil
