Marinate chicken with all the ingredients. Cook on skillet until 165F. Dice.
Melt down butter in a pan. Sauté onions and toast down spices and rice. Pour into rice cooker & add water & bay leaf.
Mix together mayo, Greek yogurt, white vinegar, lemon, black pepper, oregano, and salt for the white sauce.
Garnish with lettuce, tomatoes or even cucumbers
