Garlic Parmesan Chicken Skewers With Crispy Baby Potatoes & Side Salad
  1. In a bowl mix the diced chicken with Greek yogurt, smoked paprika, garlic powder, oregano, salt and pepper. Thread onto skewers.

  2. Bake at 200°C (fan 180°C) for 18–20 minutes, until cooked through.

  3. Mix melted butter with minced garlic, chopped coriander and parmesan.

  4. Brush the garlic butter mixture over the cooked chicken skewers.

  5. Toss halved baby potatoes with oregano, salt and pepper. Bake at 200°C for 30–35 minutes until golden and crispy.

  6. Chop lettuce, cucumber, tomato and red onion and serve on the side.
