Enchiladas With Homemade Enchilada Sauce
  1. Stir oil, flour, chili powder and cumin in a saucepan on low heat until bubbly.

  2. Add beef broth, tomato sauce, oregano, garlic and salt.

  3. Simmer for 15 min over low heat stirring occasionally.

  4. Pour some of the enchilada sauce over the chicken and stir.

  5. Layer beans, chicken, corn, and rice in the center of each tortilla.

  6. Spray the bottom of a 9x13 pan with cooking spray and add the rolled up enchiladas, seam side down.

  7. Cover the enchiladas with the sauce then top with cheddar cheese.

  8. Bake in the oven at 325 for 1 hour.

  9. Serve with toppings on the side.
