Chill evaporated milk until soft crystals form around outside edges — 15 to 20 minutes. Do not freeze!
Bring crushed pineapple to a boil.
. Stir in sugar and 1 package lemon-flavored gelatin until dissolved. Cool until almost stiff.
Whip 1 cup chilled evaporated milk with 1 tablespoon lemon juice until stiff peaks form.
Add gelatin mixture and beat slowly with rotary beater or electric mixer at low speed.
Pour into baked pie shell.
Chill at least 1 hour or until set.
