To a food processor add the soaked dates, nut butter, egg and vanilla, pulse until a paste forms, remove blade from food processor and add the dry ingredients in, mix with a spoon, place in fridge for about 5min for dough to set
Scoop dough into balls and place onto a parchment-lined baking sheet (dough will be sticky so use an ice cream scoop or spoon)
Slightly press dough dough with hands and top with extra chocolate chips
Bake at 350°F for 9–11 minutes, or until the edges are set
Let cool slightly before enjoying,they firm up as they cool!
