In a food processor or blender, combine 2 cups fresh cilantro leaves, 1 (4 ounce can) diced green chiles, ¼ cup lime juice, ½ teaspoon ground cumin, ½ teaspoon chili powder, ¼ teaspoon crushed red pepper flakes, and ¼ teaspoon salt. Blend until smooth.
Divide the cilantro-lime sauce evenly and spread over the pizza crusts2 16-inch prepared pizza crusts
Add on 1 cup shredded chicken (diced or shredded), scattering out evenly over the pizza.
Sprinkle 4 cups shredded mozzarella cheese evenly between the two pizzas to cover the chicken and prevent it from drying out. Then top with 1 cup diced sweet onion
Bake in the preheated oven for about 10-12 minutes, until the cheese is bubbling and lightly browned.
