In a bowl, add 3 mashed overripe bananas, 1 tsp vanilla extract, 200ml soy milk mixed with 1 tsp vinegar (let sit for 5 mins), ⅓ cup neutral oil, ⅓ cup maple syrup, and ⅓ cup tahini. Mix well.
Add 200g plain flour, ½ cup cocoa powder, 1 tsp baking powder, ½ tsp bicarbonate soda, and 1 tsp cinnamon. Mix well.
Pour into a lined baking loaf tin and top with chocolate chips.
Bake for 45-50 minutes at 170 degrees Celsius.
Serve with tahini and cinnamon.
