Shawarma Spiced Whole Chicken
  1. Marinate for at least 6 hours or overnight.

  2. Bake at 220 for 20 minutes on a roasting rack with ½ cup water in the roasting tin.

  3. Toss the vegetables in the remaining marinate with a little extra EVOO then add to the roasting tin and bake on 180 for about 30 minutes until the chicken is glorious.

  4. Allow the chicken to rest, and put the vegetables back in the oven for 10 minutes on high heat to crisp them up.

  5. Serve with a chopped salad, fresh lebanese bread and toum if you like!
