Heat oil in a large rondeau or stockpot.
Sauté onions and peppers until softened (8–10 minutes).
Add garlic and cook 1 minute.
Stir in cumin, chili powder, paprika and oregano.
Fold in shredded chicken and beans.
Remove from heat and stir in: 8 cups of the cheese mixture, cilantro, lime juice.
Taste and adjust seasoning.
Lightly warm tortillas so they are pliable.
Spread about 2 cups enchilada sauce over the bottoms of hotel pans.
Fill each tortilla with approximately: 1¼ oz chicken/bean filling, 2 tbsp cheese.
Roll tightly and place seam-side down.
Pour remaining enchilada sauce evenly over all enchiladas.
Sprinkle with the reserved cheese.
Bake covered with foil at 350°F (175°C) for 30 minutes.
Remove foil and bake another 10–15 minutes until the cheese is melted and lightly browned.
Allow to rest 10 minutes before serving.
