Ignore box instructions and add ½ cup of oil and 2 eggs (or ½ cup applesauce) to the vanilla cake mix
Mix well, cover, and chill in the fridge for 1 to 2 hours
Set aside the 8 best looking mini Oreos and crush the remaining Oreos into decent-sized chunks (not dust)
Mix all but about ½ cup of the crushed Oreo crumbles into the chilled dough
Divide dough into 8 portions, roll into balls, and flatten slightly into thick pucks
Bake on a parchment-lined baking sheet at 350°F for 15 minutes
Remove from oven and tap the baking sheet on a towel a couple of times to flatten cookies, then cool completely
Whip the jar of vanilla frosting on high speed for 3 to 5 minutes
Fold in the remaining ½ cup of Oreo crumbles into the frosting
Frost the cooled cookies with the Oreo frosting
Press the tops with parchment paper to smooth them out
Place in freezer to set the frosting
Remove parchment paper and press a mini Oreo into the center of each cookie
Serve and enjoy
