Chicken Perloo
  1. Heat oil in a Dutch oven and sauté the celery, green peppers, onions, and garlic until soft.

  2. Add the stewed tomatoes and cook down the liquid.

  3. Add the chicken stock and rib rub, and season with more salt if needed.

  4. Add the leftover smoked chicken and bring to a boil.

  5. Add the Charleston Gold rice, stir, and transfer to the oven at 350°F for 20 minutes.

  6. Serve the chicken perloo topped with scallions.
