Sauté your chopped onions, celery, and carrots until cooked down.
Add in your chicken meatballs (or any precooked protein of your choice).
Add your orzo, broth & seasonings and bring to a boil!
Put on simmer for roughly 20ish min until orzo has soaked up on the broth!
Add in an ample amount of spinach.
Top off with some parmesan & add some squeezes of lemon to taste!
