Whole Cherry Pie
  1. Start by rinsing and drying the fresh cherries, then remove the pits and stems.

  2. In a bowl, combine one cup of sugar with a third cup of cornstarch and sprinkle this mixture over the cherries.

  3. Add the juice of half a lemon, a teaspoon of vanilla extract, a quarter teaspoon of almond extract, and a dash or two of salt to the cherries.

  4. Gently toss the cherries to ensure they are well coated with the mixture, then let them sit for 15 minutes to allow the juices to release.

  5. Preheat your oven to 400 degrees Fahrenheit and prepare the pie crust.

  6. Pour the cherries along with their juices into the prepared pie crust.

  7. Dot the cherries with small pieces of butter, distributing it evenly.

  8. Cover the pie with a top crust, sealing it by tucking it behind the bottom crust and crimping the edges.

  9. Make an egg wash by whisking together a tablespoon of water and an egg, then brush this mixture over the crust.

  10. Sprinkle some sugar on top of the pie and bake it in the preheated oven at 400 degrees for 30 minutes.

  11. After 30 minutes, reduce the oven temperature to 350 degrees and continue baking for another 30 minutes.

  12. Once baked, allow the cherry pie to cool at room temperature for 4 to 6 hours before slicing.
