Apple Cinnamon Muffins
  1. Preheat oven at 180C/350F. In a small bowl, mix together diced apple, brown sugar and cinnamon powder.

  2. In a mixing bowl, bowl, mix together eggs, melted butter, sugar, yogurt, milk and vanilla

  3. Add pre-sifted flour, baking soda, salt and cinnamon powder. Mix just until combined. Not more than 30 seconds.

  4. Add prepared diced apples. Mix a bit.

  5. Place in a lined muffin tray. Sprinkle some brown sugar.

  6. Bake in a preheated oven for 25-30 minutes or until toothpick comes out clean when inserted.

  7. Serve and enjoy!
