Mix the basic ingredients in a bowl, adding the water a little at a time.
Knead until a soft dough is obtained.
Place the dough in a bowl covered with a cloth or foil and let it rise for about two hours.
Oil a baking tray and roll out the dough without kneading it.
Make large holes in the dough with your fingertips.
Prepare the emulsion by shaking thoroughly the water, oil and salt.
Spread the emulsion over the focaccia with a spoon.
Let it rise for another 30 min.
Bake in the oven at 200 °C for about 30 min until golden brown.
