Place chicken on a baking tray and drizzle with olive oil.

While chicken is baking, prepare the hot honey glaze by combining honey, sriracha, butter, and apple cider vinegar in a saucepan.
Heat the hot honey mixture until butter is melted and combined.
Once chicken is cooked, toss it in the hot honey glaze.
Serve with sliced gherkins if desired.
