  1. After 48 hours of pickling, shred the eggs using a box grater.

  2. Pour the shredded eggs into a medium sized bowl.

  3. Add ¼ cup mayo, ½ teaspoon dijon mustard, and ¼ teaspoon cayenne pepper to the bowl.

  4. Mix well and serve as a sandwich filling.
