Thinly slice or dice 4-5 Persian cucumbers and add them to a mason jar or salad bowl.
Add 1.5 cups of raw cauliflower florets to a food processor and pulse a few times to make them into fine "cauliflower snowflakes".
Finely dice a shallot or a small red onion and add it to the cauliflower and cucumber.
Finely chop a handful of fresh parsley and fresh mint and add to the salad.
Add the zest and juice of a lemon, 1 tablespoon of a good olive oil, a pinch of salt and pepper, and ½ tablespoon of Aleppo pepper or red chili flakes.
Dress the salad with 1-2 tablespoons of hummus and feel free to top with chicken, shrimp, or chickpeas.
Put the lid on and give it a shake (or toss if in a bowl) and enjoy.
