Protein Style Muffins, Spinach Chocolate, Mini
  1. Pre-Heat oven to 350 degrees F.

  2. In a large bowl, sift and whisk together Bread Flour, Protein Powder, Butter Milk Powder, Inulin (if using), Cocoa Powder, Baking Powder, Baking Soda, and Salt until incorporated.

  3. In a blender add oil, maple syrup, Eggs, Milk, Greek Yogurt, extract, spinach, and banana and blend until smooth.

  4. In batches of about a cup at a time, add the Flour Mixture from step 2 to Banana Mixture from step 3.

  5. Fold together until just combined and there are no flour streaks. Do not overmix.

  6. Scoop or pipe batter into greased muffin tins to the top.

  7. Bake for 12-13 min or until a toothpick inserted into the center of a muffin comes out clean.
