Treacle Soda Bread
  1. Preheat oven to 200°C fan. Line a baking tray with parchment.

  2. In a large bowl, mix the flour, oats, salt, and bicarb.

  3. In a jug, whisk together buttermilk, treacle, and sugar until smooth.

  4. Pour the wet mixture into the dry and stir quickly with a spoon until it just comes together (don't overmix).

  5. Tip onto a floured surface, shape into a rough round, and place on the tray.

  6. Score a deep cross on top with a floured knife, or three ridges across the top.

  7. Bake for 30–35 minutes until dark, risen, and it sounds hollow when tapped underneath.

  8. Cool slightly before slicing. Best eaten warm with salted butter.
