Butternut Squash Pasta
  1. Preheat oven to 450F. Spray a baking sheet with olive oil cooking spray, then add squash, carrots, onion and the entire bulb of garlic. Drizzle with olive oil and season with salt, pepper, and rosemary. Toss to combine. Bake for 25 minutes or until veggies are soft and starting to brown.

  2. While veggies bake, cook your pasta according to package instructions, making sure you reserve a cup of pasta water before you drain it.

  3. Once veggies are done cooking, add them to a high speed blender, add 5 roasted garlic cloves, along with cottage cheese, only 1 cup of pasta water, almond milk , nutritional yeast, and salt to taste. Blend until smooth, adding the other ½ cup of pasta water if sauce is too thick.

  4. Pour pasta sauce over cooked pasta and enjoy!!
