  1. Put 2 whole fresh capsicums on the grill, nice and close to the charcoal so they cook through well and will easily peel.

  2. Once you have cooked through each side (including the top and bottom), peel off the skin which should now come off really nice and easily.

  3. Then stand the capsicum up and using a knife, cut around the stalk so that you can remove it.

  4. Slice the capsicum in half and then into strips (removing the seeds).

  5. Put it into a bowl and add the garlic.

  6. Add fresh parsley.

  7. Drizzle EVOO.

  8. Mix well with your hands.

  9. Put the sausages into the grill and cook them through well.

  10. Once they are almost done, slice the rolls through the middle, opening them up and lightly char them so that they brown just slightly and they are warm and crunchy to eat.
