Preheat oven to 425.
Place salmon on parchment lined baking sheet. Using the back of a spoon, spread 1 tbsp Dijon mustard on each salmon filet.
To a small bowl, mix sugar, paprika and thyme. Using a clean spoon, sprinkle over the mustard until coated.
Cook the salmon for 12-15 minutes or until you reach your desired doneness.
Plate your bowl with rice, greens, avocado, edamame and pickled red onions. Put the cooked salmon on top and serve warm with soy sauce or tamari.
