Preheat oven to 220°C
Dust puff pastry with self raising flour
Spread Dijon mustard on the pastry
Sprinkle grated red cheddar over the mustard
Season with freshly ground pepper
Arrange 12 slices of streaky smoked bacon on top
Mix brown sugar with fresh thyme
Sprinkle the brown sugar and thyme mixture over the bacon
Brush with egg wash
Turn oven down to 200°C and place tray in oven
Bake for 25-30 minutes, checking frequently as all ovens are different
Store in an airtight container for up to 3 days
