Season short ribs with salt and black pepper
Sear short ribs on all sides in a large pot until a nice crust forms
Cook down onions with a pinch of salt and a splash of water to help them steam
Add Knorr Beef Flavor Base to the onions and mix well
Add tomato paste, Worcestershire, soy sauce, and white wine or sherry to the pot
Add water and the Knorr Beef Flavor Base to the braising liquid
Return short ribs to the pot and braise in the oven until tender
Remove short ribs from the pot
Add orzo directly into the pot and simmer for about 15 minutes
Stir in heavy cream
Add shredded Gruyère and grated Parmesan, stirring until creamy and glossy
Finish with balsamic vinegar and a pinch of nutmeg
Serve with fresh thyme leaves and additional Parmesan
