Zest lemons using a Microplane and spread in a thin, even layer on a plate.
Dehydrate the zest by either leaving on the counter for a few days or microwaving on high in 30–60 sec intervals, stirring between, for 2–4 mins total until fully dry.
Combine all ingredients in a mortar & pestle or spice grinder and grind to your desired consistency.
Store in an airtight container for 2–3 months.
Shake well before using to reincorporate.
