Peel the carrots and slice them lengthwise as thinly as possible.
Add the orange juice, garlic, vinegar, olive oil, salt, sesame seeds and parsley to a small bowl or jar. Whisk well until combined.
Add the dressing to the bowl with the carrots and toss well until carrots are coated. Serve immediately at room temperature or let them chill and soften for 20-30 minutes.
