Preheat oven to 375F.
Line a 9x9 pan with oversized parchment paper.
Mix all the ingredients together, except the 1 cup of Parmigiana Reggiano for the top.
Add the ½ cup of Parmigiana Reggiano and mix.
Pour the mixture into the prepared pan.
Sprinkle the remaining 1 cup of Parmigiana Reggiano on top.
Bake for 15-25 minutes until the vegetables are cooked to your desired texture and the top is browned.
Serve warm.
