Get the rice on first — it’ll be done right when everything else is.
Broth: whisk coconut milk, curry paste, stock, soy and sesame oil in a small pot. Bring to a gentle simmer and let it go for 5 minutes while you cook the beef.
Heat a large pan over medium-high. Brown the mince with the onion, breaking it up as you go, about 5 minutes. Add garlic and ginger, cook 1 minute until fragrant.
Mix tamari and maple, pour over the beef and let it bubble for 2 minutes.
Stir through the arrowroot slurry and cook 1 minute until glossy and sticky. Fold through the spinach until just wilted.
Bowl up: rice, ladle of broth, sticky beef on top, cucumber and spring onion to finish.
