Set your oven to 200C/ 390F.
Roughly chop up all ingredients. Chop the garlic bulb in half.
Place all ingredients on a baking tray covered with parchment paper and bake for 45 min.
When the veggies are done add them to a saucepan along with the rest of the ingredients and blend until smooth. Add salt and pepper to taste, enjoy with grilled cheese!
