Choose pork belly with both fat and lean meat
Cut pork belly into equal strips
Pour white wine on the meat and rub it in to clean and remove the smell
Put the pork in a pot
Add 1 spoon of salt and fill with cold water
Boil to remove the dirty bits from the meat
Once the water is clean, cover the pot and cook on medium low heat for 30 minutes
Check that a chopstick goes through the meat easily
Take the pork out and heat oil in a pan
Put the pork belly in the pan, skin side down
Cover the pan to stop oil from splashing
When one side is golden, turn it over and cover again
Fry slowly on low heat so the fat melts
When both sides are golden and crispy, remove from pan
Serve plain, with barbecue sauce, or wrapped in lettuce
