Start by slicing the onion into long, thin strips. Then, throw them in a medium heat pan with 1 tbsp oil
Cook them on medium heat for the first 10 minutes, stirring often. After 10 minutes, turn the heat down to low and continue stirring every couple of minutes. Around the 30-40 minute mark they should be super soft and brown. Set to the side.
In a pot on medium heat, add in the butter, garlic, peppercorn, and flour
Stir the ingredients until they begin browning (3 mins) and then add in the heavy cream, salt, pepper, and herbs. Allow to simmer on very low heat for 15 mins.
Wash, peel, and slice your potatoes thin
In a baking dish (I used a 60oz oval dish) grease it with some butter, then start layering.
Make a layer of potato, gruyere & parmesan, and the carmelized onion
Repeat step 7, then add on half of the creamy sauce (pass it through a strainer first!!)
For the third layer, you'll put potato, the sauce, gruyere, colby jack, and more gruyere
Put the dish into a 315 degree oven for 1.5hrs. Slow cooking is best, but to save time, you can also cook it at 350 for 50 minutes or until golden brown on top
Keep checking the oven after 40 minutes to ensure it does not burn.
