Mix the sauce ingredients together in a small bowl until the sugar fully dissolves.
Build Your Wok Clock: Start at 12 o'clock with the garlic, followed by the prawns, the sauce and lastly the stock.
Heat 1-2 tablespoons of vegetable oil in a wok to a medium heat, add the garlic and stir-fry for 30 seconds. Add the prawns and press them down into the hot oil with a spatula for 1-2 minutes, then flip them over and sear the other side for 1-2 minutes.
Increase the heat to high and heat the oil until smoking hot. Pour in the sauce and bring to a vigorous boil, then pour the stock around the edges of the wok and fold the prawns through the sauce. Continue boiling for 1-2 minutes until the sauce has thickened enough to coat and almost wrap around the prawns, then garnish with the coriander and serve.
