Grilled Cowboy Butter Chicken Skewers
  1. Step 1: Mix the Cowboy Butter SauceIn a small bowl, whisk together the melted butter, minced garlic, Dijon mustard, lemon juice, parsley, smoked paprika, and cayenne (if using). Set aside about a quarter of the sauce for brushing on the skewers during grilling.

  2. Step 2: Marinate the ChickenPlace the cubed chicken in a bowl, drizzle with olive oil, then season with salt and pepper. Pour the remaining cowboy butter over the chicken and toss to coat. Let it marinate for at least 15 minutes, or up to 2 hours for more flavor.

  3. Step 3: Assemble the SkewersThread the marinated chicken pieces onto the soaked wooden skewers, spacing them slightly so they cook evenly.

  4. Step 4: Grill the SkewersPreheat your grill to medium-high. Grill the chicken skewers for 10–12 minutes, turning occasionally. In the last few minutes, brush them with the reserved cowboy butter to add a rich, buttery finish.

  5. Step 5: Serve and SavorOnce grilled, remove the skewers and let them rest for a few minutes. Garnish with extra chopped parsley if desired and serve hot with a side of grilled veggies, rice, or a crisp salad.
