Start by cutting the chicken breasts or thighs into bite-sized pieces. It ensures that they cook evenly and soak up all the delicious flavors of the stir-fry sauce. You can use any part of chicken, like boneless skinless chicken thighs or even drumsticks, which is my favorite part.
In your trusty cast iron pan, heat a bit of oil. Add onion and garlic and let it caramelize. Add the chicken pieces and let it sizzle until it's cooked through and beautifully browned. This is where the magic begins.
Add broth, soy sauce, and a pinch of xanthan gum once your cooked chicken is done halfway. Stir well, ensuring xanthan gum is distributed evenly to thicken the sauce.
Add the vegetables once the sauce has thickened, and cook for 3-4 minutes.
