Slice apples into ½-inch thick rings, keeping the peel on.
Use a small round cutter (or bottle cap) to remove the core and seeds — this gives them that "doughnut" shape!
Cut thawed puff pastry into ¾-inch strips.
Wrap each strip around an apple ring.
Mix sugar + cinnamon in a bowl.
Roll each puff pastry–wrapped apple "doughnut" in the cinnamon sugar, plus add more on top. (Tip: if it doesn't stick, dab with a little water first!)
Place on a parchment-lined baking sheet.
Bake at 375°F (190°C) for 40–45 min, until golden + crisp.
Serve warm with ice cream, or enjoy as is!
