In a bowl, mix water, yeast, and honey, add flour and mix, then add salt and olive oil and coil fold until the dough becomes soft.
Transfer to an oiled bowl, cover, and let rise in a warm place for 2 hours or until doubled.
Finely chop spinach, sprinkle salt on top, leave for 10 minutes, then drain well and mix with feta, cheddar, and chili flakes.
Gently flatten the dough on an oiled surface, add the spinach mixture, close it, then place on an oiled baking paper and drizzle some olive oil.
Slide into a very hot preheated oven at 500°F for at least 30 minutes at max heat.
Bake for 10 minutes, then broil for 5 minutes until golden.
