Rinse and drain the pinto beans and black beans. Also, if you are using frozen corn, defrost it. Then, dice the red onion, dice the tomatoes and chop the cilantro.
Mix the fat-free cottage cheese and salsa. This is the base of your bowl.
Add the pinto beans, black beans, corn, red onion, and tomatoes on top of your cottage cheese and salsa mixture.
Top your bowl with cilantro and enjoy! Some other great optional toppings are extra salsa, avocado, cheese, and a squeeze of lime.
