In a medium pot combine water with lemon and lime rinds. Try to exclude as much of the white pith as you can as it will make your soda bitter.
Cover pot and bring to a boil. Reduce heat and simmer 5 minutes.
Remove from heat, strain out the rinds, add sugar and the juice from the lemons and limes.
Strain mixture and cool completely. (110 F)
Add ginger bug to swing top bottles and add your base
Allow to ferment in a warm place for 48 hours. Burp the bottles once a day. after 48 hours, add extra sugar and gingerbug, 2 tbsp of each per bottle. Allow to sit for an extra 24-48 hours to get it fizz up. Soda will become less sweet and more alcoholic the longer it sits.
