One-pan Red Rice & Baked Chicken Breast
  1. Preheat your oven to 400°F.

  2. In a glass Pyrex baking dish, add the washed rice, tomato sauce, water, salt, butter, and olive oil. Mix everything together very well.

  3. In a separate bowl, season your chicken breasts with olive oil, ½ lemon juiced, paprika, salt, pepper, garlic powder, dried minced garlic, and dried parsley. Rub it in so the chicken is well coated.

  4. Lay the seasoned chicken right on top of the rice mixture.

  5. Cover the dish tightly with foil and place in the oven for 1 hour.

  6. After 1 hour, remove the foil and bake uncovered for 10–15 minutes to let the top get beautiful.

  7. Check it at the 1-hour mark. Some ovens may need up to 30 more minutes until the rice is fully tender and the chicken is cooked through.

  8. Let it rest for a few minutes, then fluff the rice and serve.
