Preheat oven to 400°F.
Place the chicken breasts in a 9x13-inch baking dish. Season both sides with the salt, pepper, and garlic powder.
In a small bowl, whisk together all of the sauce ingredients until smooth. Pour most of the sauce over the chicken, reserving about ¼ cup for later. Coat the chicken evenly.
Cover tightly with foil and bake: Thin-cut chicken breasts: 20–25 minutes. Regular or thick chicken breasts (or thighs): 30–40 minutes.
10-15 min before chicken is done remove from the oven, add the vegetables, and drizzle the reserved sauce over the top.
Return to the oven uncovered for the 10-15 minutes remaining or until the vegetables are tender and the chicken reaches an internal temperature of 165°F.
Serve with roasted potatoes, rice, or your favorite side.
