Curtido
  1. Thinly slice the red cabbage and red onion using a mandolin or knife

  2. Add the sliced cabbage and onion to a large glass or plastic bowl along with cilantro and diced habaneros

  3. Add 3 heavy pinches of salt to the bowl

  4. Massage the mixture well for 4-5 minutes until it starts to soften

  5. Add the lime juice, white vinegar, sugar, black pepper, and Mexican oregano

  6. Mix well and adjust seasonings to taste

  7. Transfer the mixture to a jar

  8. Refrigerate for at least a couple hours before serving, longer if possible for better flavor

  9. Serve with tacos, burritos, taquitos, or other dishes as desired
