Thinly slice the red cabbage and red onion using a mandolin or knife
Add the sliced cabbage and onion to a large glass or plastic bowl along with cilantro and diced habaneros
Add 3 heavy pinches of salt to the bowl
Massage the mixture well for 4-5 minutes until it starts to soften
Add the lime juice, white vinegar, sugar, black pepper, and Mexican oregano
Mix well and adjust seasonings to taste
Transfer the mixture to a jar
Refrigerate for at least a couple hours before serving, longer if possible for better flavor
Serve with tacos, burritos, taquitos, or other dishes as desired
