3 Ingredient Cottage Cheese Breadsticks
  1. Preheat your oven to 400°F (205°C). Line two baking sheets with parchment paper.

  2. Add the cottage cheese to a blender and blend until completely smooth. Transfer the blended cheese to a large mixing bowl and add the flour. Mix until the flour is incorporated. Lightly flour your hands and work surface and transfer the dough to your floured work surface. Knead the dough until it is smooth. The dough should be slightly sticky but manageable.

  3. Lightly flour your work surface again and your hands. Divide the dough into 12 equal portions. Then roll each portion into a 6-inch log (the log will be a little less than 1 inch thick).

  4. Arrange the breadsticks on the baking sheets so they are spaced about 2 inches apart and brush generously with garlic butter.

  5. Bake for 15-20 minutes, or until the breadsticks are puffy and golden on top.

  6. Remove from the oven and immediately brush with more garlic butter. Allow the breadsticks to cool a little before serving, but make sure to serve them warm. You can also add some grated parmesan cheese and finely chopped parsley for garnish. Serve with a side of marinara sauce if desired. Store any uneaten breadsticks in an airtight container in the fridge or freezer. Reheat before eating leftovers.
