Wash and hull strawberries. Slice into bite size pieces.
Add sugar, corn starch, salt, cinnamon, nutmeg, and lemon juice and stir.
Let stand 10 minutes. Meanwhile, prepare pie crust (See link above for recipe).
Fill with fruit mixture.
Dot with butter.
Put pie crust on top. If you dont want to do lattice pie crust be sure to add a few slits to allow to vent.
Lightly beat egg white and water together, brush on top pie crust before baking.
Bake at 400 for 35-40 minutes.
